Looking for an easy app for a cool winter night? Baked cheese is a traditional and easy way to warm up their appetite for the main event. Here I make a baked french camembert with your choice of three accompaniments.
Let’s start with the cheese and while it is baking you can prepare your topping of choice.
BAKED CAMEMBERT IN PASTRY
- 1 pkg Pillsbury crescent roll dough or you can use one sheet of puff pastry
- 1 round (8 to 12 oz) Camembert or Brie cheese
- Heat oven to 375°F. Unroll dough and create a pin wheel with the dough by overlapping the pointed end of the pastry in the center.
- Press the center together with your fingers to make a round area to place your cheese.
- Place cheese in the center of the dough and press the dough evenly around cheese and press to seal completely.
- Turn pastry-wrapped cheese upside down onto ungreased cookie sheet. Brush top of pastry with water. Bake 20 to 25 minutes or until golden brown. Cool 15 minutes.
Now for the accompaniment..
1. Cranberry Compote
- 1/4 cup pecan halves
- 1/2 cup canned cranberry sauce
- 1/4 tsp orange zest
- 1 tbsp orange juice
- 1 tbsp honey or maple syrup
- 1/8 tsp ground pepper
Mix all ingredients together and spoon over hot baked cheese.
2. Honeyed Pecan
- 1/2 cup pecan halves toasted
- 1/4 cup honey
- 1/4 tsp sea salt
Mix all ingredients together and spoon over hot baked cheese.
3. Fig and bacon marmalade
- 3/4 cup fig preserves such as Bonne Maman Preserves Fig or whichever you’d like.
- 4 strips of smoked bacon
- 1 tsp fresh chopped thyme
Cut bacon into small lardons. Sautee in a fry pan over high heat until crisp and fully cooked. Drain off excess fat and place pan off to the side until cooled slightly (about 4 mintues). Place back over low heat and add the chopped thyme. Sautee slightly until the thyme is lightly browned and add your fig preserve. Remove from the heat immediately while stirring constantly. Spoon over hot baked cheese at once.
Serve the cheese warm with crackers, apples or a baguette.
